(9/2021) Pierre assembles this wine from a tiny 0.44-hectare parcel planted in 1958 by his great-grandfather Henri Boillot. He uses no chemical fertilization, harvests the grapes by hand, ferments with indigenous yeasts and bottles without fining or filtration. In a recent tasting, this nuanced and seductive Volnay outshined pricier Burgundy from many more expensive growers. As you'd expect with young Burgundy of this caliber, an extended unfurling in your decanter will work wonders. With air, the initial mouthful of pure limestone minerality makes way for red floral tones, nuanced red fruit notes and an otherworldly luxurious texture. This Volnay is a prime example of why wine lovers swoon for Burgundy.
